  • 4 medium potatoes (peeled and thinly sliced)
  • 5–6 large eggs
  • 1 onion (optional)
  • Olive oil (for frying)
  • Salt (to taste)

 

 



Instructions

Follow these simple steps to prepare an authentic Spanish tortilla at home:

 

  1. Slice & Fry the Potatoes
    Heat plenty of olive oil in a frying pan. Add the sliced potatoes (and onions if using) and cook over medium heat until soft but not crispy.
  2. Drain & Mix with Eggs
    Remove the potatoes and drain the excess oil. In a bowl, beat the eggs with a bit of salt, then gently mix in the cooked potatoes.
  3. Cook the Tortilla
    Add a little oil to a smaller non-stick pan. Pour in the egg-potato mix and cook on medium-low heat for 5–6 minutes, until the bottom sets. Flip the tortilla using a plate, then cook the other side for 4–5 more minutes.
  4. Let It Rest & Serve
    Allow the tortilla to rest for a few minutes. Slice and serve warm or at room temperature.
